Continued from yesterday...

Okay, so after the new recipes, we have decided...they are a success!  They were both delicious.  Here are the recipes if you want.

No pictures though, maybe next time.

Diet - Coke Cake

1 box cake mix (I used Betty Crocker double fudge chocolate cake)
10 oz diet coke (I used coke zero)

You can use different cake mixes with different flavors of diet soda.  Just empty box into bowl, add 10 oz of diet soda, mix.  Put into greased 13 x 9 pan--or make as cupcakes.  Bake according to box directions.  Cake is done.

Zero point frosting:
8 oz container fat free cool whip
3 oz of any flavor fat free sugar free jello instant pudding (I used white chocolate)
1 cup milk

Use as much milk as you want for consistency of frosting.  I used not quite a cup, and it was thick like pudding.  I think next time I will use less milk.

Just make sure to keep in freezer.  Frosting is free for one serving, more than one serving is 1/2 point.

Margarita Chicken--3 points per serving

1/2 c frozen non-alcoholic margarita mix
3 tbs lime juice, freshly squeezed
1 clove garlic-smashed (you can use more garlic if you wish)
1 & 1/2 pound chicken breasts--skinless/boneless
Coarse Salt

Mix ingredients in large resealable freezer bag.  Add chicken, seal and turn to coat chicken.  Put in fridge and marinate at least one hour, turning occasionally.  Do not marinate longer than 24 hours.
Take chicken out of bag and reserve marinade, place on grill.  Brush one side with reserved marinade from bag and sprinkle coarse salt.  Cover grill, cook 15 minutes.  Flip chicken breasts, brush other side with rest of marinade and sprinkle with coarse salt.  Cook 20-40 more minutes or until chicken is done.  Serve :)

  1. Sounds yummy!!! I have made the diet soda cake before, so easy and yummy! I've already done a white cake with 7up that is good too!
